Every year high honors are attributed to the lord bishop of Bomarzo in the 6th century tradition.
In the days of the celebration, the program hold the traditional Biscuit Fir and the expressive Horse Race of Saint Anselmo. The most celebrated miracle of the Saint is that of the acorn. While the Goti's, second half of the fifth century, were besieging Bomarzo, Anselmo looked up to the heavens when homicidal bullets that looked liked lead acorns began to fall upon the barbaric troops.
The prodigy is depicted in a 17th century canvas in the church of Assunta where the body of the saint is held in an urn under the main altar.
Even today, some of the town's people of Bomarzo are ready to swear that their house still conserve a number of the miraculous acorns. The religious manifestation consists of the vigil of the Saint's urn and a procession with an 18th century Shrine that holds a fragment of the Saint's bones.
The biscuit fair was created in 1973 and is opened every year on the evening of April 23rd after the start of the horse race and the swearing in of the Priors of the five reigns of Bomarzo.
The "biscuit" symbolizes the bread that the bishop loved to offer to the poor and pilgrims. It's a type of sweet donut prepared with dough that rises naturally and wet with a pinch of "zozza" which includes various liquors, oil, wine, sugar, lemon and anise. The fair ends with the horse race on the 25th where a jockey from each of the five reigns of Bomarzo competes for the win. Before the race there is a parade with the Historical Court of Bomarzo and the local band
